Easy On The Resolutions Salad

 Alright y’all, Happy New Year! This recipe is super quick and easy on the resolutions. After weeks of second helpings and bingeing on sugar, I wanted to send a healthy recipe your way. Start your week off by purchasing these ingredients on Sunday and serve salad as dinner or lunch this coming week. For my girls who aren’t big on salads, try eating it with fish, a lean meat or a cup of soup!

Easy On The Resolutions Salad
Serves 2-3

  • 1 clementine, peeled
  • 1/3 cup edamame
  • 1/3 cup yellow corn
  • 5-7 strawberries, sliced
  • 10 cherry tomatoes, sliced
  • 1/2 cucumber, sliced
  • feta cheese, to taste
  • 1/3 of a yellow heirloom tomato, about 6-7 slices
  • garnish with: sliced almonds, scallions, avocado
  • lettuce of your preference
  • fresh black pepper
  • olive oil and vinaigrette 

This recipe is super easy: wash all ingredients, toss thoroughly and serve with a small amount of fresh black pepper, olive oil and vinaigrette.
