Tasty Lentil Soup


There’s nothing like the end of Summer. With BBQs and cookouts behind us, it’s hard not to feel a bit nostalgic when everything shifts back to its regularly scheduled program. The blazing hot days, the deceptively cool breeze (that we never receive in Houston), the excitement for comfort foods and light jackets is sure to resonate mixed feelings.

This Fall, the first comfort food that you should add to your recipe book is this easy-to-cook lentil soup. Lentils are a good source of nutrition and a wonderful source of protein. This healthy legume is known to be a great source of iron, which can be a big help in keeping your energy levels high as you adjust back to your everyday routine.

The prep time and cook time for this recipe is under 30 minutes, there’s no reason you shouldn’t try this bad boy at home!


Vegetarian Lentil Soup
serves 3-4

3 Tablespoons of olive oil
2 clove of pressed garlic
1 cup of chopped onion, diced
1/2 cup of chopped celery
5 cups of vegetable stock
2 cups of water
1 cup of lentils
1 tsp pepper
1 tsp salt, (or salt to taste)
1 tsp. of thyme
1 lemon

Heat a saucepan over medium heat. Add oil, onion, garlic and celery for 3-4 minutes or until golden brown. Add the thyme, lentils, vegetable stock, and water, and bring to a boil. Reduce the heat and simmer until the lentils are tender, about 20 minutes. Season with salt and pepper to taste. When you’re ready to serve, top with a squeeze of fresh lemon juice (remember to remove the seeds).
